Freeze-drying

AndesThe process of freeze-drying is known since centuries by Andes people : it’s what happens at the top of high mountains where the ice sometimes disappear without any water coming down.

Freeze-drying consists in drawing out the water contained in the products after having deep frozen them by sublimation that is changing the water from a frozen condition to a vapor condition without going through the liquid condition.
This very gentle dehydration does not destroy the cells and fibres such as is case in the natural phenomena at high altitude.
This gives to the products their specifics and advantages.
The reduction of weight is 90 to 95% for vegetables or fruits, from 60 to 80% for meat or fish.
Gustative and dietetic qualities are preserved as well as vitamins and cellular structures.
