BASIC FOOD PRINCIPLES
The Proteins bring the basic elements (acid amino) essential to our body.
The best proteins are brought by meat, fish, eggs and dairy products.
The Lipids are rich in energy and essential to our cells. The role and the function of the lipids depend on the kind of fatty acids included : saturated, mono fatty or poly-unsaturated acids.
The Carbohydrates are the main source of energy. They have to be present in to our food, first of all with the form of starch : so it’s necessary to eat bread with each meal and at least one meal of starchy food per day.
The 13 Vitamins and the 20 Minerals do not generate calories but are necessary to the body. Therefore, they have to be provided by food.
We find vitamins in greases (vitamins A, D, E K) and in the water contained in food (vitamins B contains and C).
There are many minerals (calcium, phosphorus, magnesium…) and trace elements (iron, fluorine, selenium…).
The vitamins and minerals are present in variable quantity in food, hence we should have a varied and sufficient food.
